Aunt Jane’s Delicious Apple Cake


Don’t get scared off by the seemingly decadent amounts of oil and sugar. It’s really worth it, trust me!

1-1/4 cups vegetable oil
1-1/2 cups white sugar
3 eggs
1 tsp vanilla extract
3 cups flour
1 tsp baking soda
1/2 tsp salt
3 cups peeled, diced apples
1 cup chopped nuts (I usually use pecans or walnuts)
With a wooden spoon, mix sugar into oil. Add eggs one at a time and beat well. Add vanilla. Mix dry ingredients separately and add to egg mixture. Fold in apples and nuts. Pour into ungreased tube pan. (Sometimes I use 1 large loaf pan + 1 round cake pan for variety.)  Bake at 325 F for 1-1/2 hours.
1/2 cup brown sugar
1/2 cup milk
1/3 cup butter
1 tsp vanilla extract
Mix and boil 5 minutes. Pour over cake while it’s still hot and let set. Bon appétit!
