Recipe: Favourite Honey-Curry Baked Chicken

I just mentioned this dish in my blog post and my mouth started watering.  Here’s the recipe.

Preheat oven to 350 F.

Arrange in shallow baking pan, skin-side up (or remove skin, if you have time):

3 lb chicken pieces, bone in

Combine and pour over:

1/3 cup melted butter, 1/3 cup honey, 2 tbsp Dijon mustard, 1 tsp salt, 1 tsp curry powder

Bake about 1-1/4 hour, basting every 15-20 minutes until chicken is tender and nicely browned.  Serve with rice.
